Chef Tom Brodi, creative, dedicated and passionate, returned from New York's Grammercy Tavern in 2001 to lead the culinary team at Canoe Restaurant on the 54th floor of the Toronto Dominion Center.  Under his direction Canoe has remained one of the top rated and most successful restaurants in Canada.

A veteran of the CN Tower and the Air Canada Centre in Toronto, where he revolutionized destination dining, Chef Long is now the proud co-owner of Veritas Restaurant.  Brad has also delved into a fully sustainable farming project and is a co-host of the Food Network's immensely popular "Restaurant Makeover".

After a rewarding career in the Toronto fine dining scene in the mid-nineties, Kevin Maniaci decided to pursue an Executive Chef position in one of Niagara wine country's foremost winery restaurants, Inn on the Twenty.  The restaurant located in Jordan Station, champion's locally sourced ingredients under Kevin's creative culinary direction.
