Sommelier - Markus Carl
Markus Carl joined Taboo Resort, Golf & Spa as Sommelier in April of 2006 after owning and operating a successful fine dining restaurant in Haliburton for 25 years.
In his quest to further expand his encyclopedic knowledge of wine he spends a vast amount of time in the Niagara Region and has traveled to more than 15 regions globally. By visiting wine producers all over the world Markus has gained a practical understanding of the wine-making process and further-trained his palate.
Although in charge of buying all wines for the resort to appease a large clientele of leisure and corporate guests, Markus is also in charge of inventory and training. His daily focus is on tableside service in Elements and food pairing for the Culinary Theatre. His interactive approach with guests helps the clientele discover wines that they would not normally consider, allowing them to further their “wine horizons”.
Markus has increased the scope and quality of Taboo’s wine program resulting in the Wine Spectator Award of Excellence in 2006, 2007 and 2008 and the VQA Award of Excellence in 2007 and 2008.
He is a graduate of the University of Guelph, earning a Bachelor of Commerce in the Hotel and Food Program.
