Elements Culinary Theater was given Three Stars from
Where to Eat in Canada by Anne Hardy.
At the end of last season, Jay Scaife took over the Culinary
Theatre at Taboo from Michael Pataran. The Culinary Theatre
occupies the heart of the dining-room, which has a dramatic
view of the lake through a screen of trees. Scaife, who used
to work with Pataran, now cooks alone for the twenty guests
who have booked seats at the bar and maintains a running conversation
with anyone more interested in cooking than their girlfriend
or mother-in-law. There's no menu. Diners can choose five or
seven courses, each with an optional wine service. Pateran used
to cook, broadly speaking, in a Asian style; Scaife used to
cook in a modern French style with a Mediterranean accent. Now
Scaife does both - preparing exquisite morsels of bison, caribou,
sablefish, king salmon, chiogga beets and beautiful chawan mushi
or custard soup. He makes full use of fresh local produce-many
of the vegetables for instance come from Mrs. McBridge of Gravenhurst
Farmers Market. Scaife is an elegant, original and entirely
convincing chef. he doesn't cook the sweets, which ar much less
interesting, but he does choose the wines that come with each
course and he chooses extremely well. he's equally at home with
sake and has four from Japan and one from California to choose
fro, priced at up to 140.00 a bottle. (If you want something
cheaper, ask for Tsingtao beer from China, Asahi from Japan
or Mcauslan apricot, wheat from Quebec.) Taboo is an adventure
you shouldn't miss, whatever the cost.
